1. Put the eggs in to a sauce pan of cold water, making sure the eggs are covered by an inch of water.
2. Quickly bring the water to boil and as soon as it starts boiling reduce the hit to a gentle simmer.
3. Leave on the fire for 5 minutes.
4. Put the pan under a cold running tab of water for another 5 minutes. This is in fact the most important secret of how to cook hard boiled eggs because after 5 minutes the eggs are completely done and leaving them boil for any longer would not only get the white to rubber up but actually get that green lining to appear.
However if you prefer to start with the hot water, the most modern reinvention of the wheel, that is the technique of how to cook a hard boiled egg is this:
1. Bring to boiling temperature a sauce pan of water.
2. As soon as the water starts boiling carefully lower the eggs in the water.
3. Bring the heat down to a gentle simmer and leave it like that for 1 minute.
4. After 1 minute turn off the stove and put a lid on the sauce pan and leave it for another 8 minutes.
5. Run the eggs under a cold tab of water for about 5 minutes so as to make sure you will have stopped the cooking process. Don’t worry they will still be hot and nice.
